Almond Chicken Fingers


  • 1 lb Chicken Breast

  • 1 cup of almond meal podwer

  • 1tbsp paprika

  • 1/2 Tsp garlic powder

  • 1 tsp cumin

  • 1 tsp cayenne pepper

  • 1 tsp of Himalayan Pink Salt 

  • 2 egg whites, lightly beaten

  • PAM cooking spray


  1. Preheat oven 375 degrees

  2. Slice chicken into long strips

  3. Mix together all ingredients: almond meal, paprika, garlic, cumin, cayenne, pepper, and salt

  4. Dredge chicken strips in the egg batter, and then coat with ingredient mixture

  5. Place chicken on a cookie sheet greased with PAM

  6. Bake for 20-25 minutes or until chicken is cooked


You can store the meat up to 4 days in the fridge. For longer storage, freeze the meat in individual zip-log bags up to 2 weeks.
